Tuesday yumminess!

With Thanksgiving (love love love this special day!) around the corner, it is that time of the year when we wonder what to do with our surplus of (affordable) pumpkin. Savory? Sweet? Cake? Soup? Roasted? My dilemma is always the same when I decide to bake with pumpkins: how to make sure this ain’t over sweet?! There is a fine list between lovely sweet and baaaa are you trying to give me a sugar attack?! 

Those pumpkin spice muffins are fabulicious. 

Once in a while, I bake for my work colleagues and believe me, this is a tough crowd to please. I usually get the famous “wtf bi*tch, how did you dare to bake with no flour and no sugar” look but those muffins have been duly approved by this demanding jury and I’m very excited to share this recipe with you.
