Days are getting shorter, temperatures are dropping (hopefully not too fast!) and you might be, like me, in need of an easy and quick recipe for a comforting meal after work. I might be able to help you here…
If you have 400 g of cod, 1 egg yolk, 1 tbsp chives, pepper, salt, a tsp of mustard (Dijon please!) and some homemade mayo in your pantry or fridge, you could treat yourself to some delicious paleo fish cakes.
Pre-heat (180° C) your oven while you throw all the above mentioned ingredients in a mixing bowl. Make 6 patties and bake for 10 minutes (could it be any easier?!).
It can be served with a poached egg (thanks #thekitchn for a well needed cooking lesson), some sautéed spinach as side dish and voila!
