It is a popular belief that breakfast is the most important meal of the day. Scientists cannot agree on this so I have decided for myself and I will eat “breakfast [as Adelle Davis said] “like a king, lunch like a prince and dinner like a pauper”.
Therefore I am always happy to find delicious and easy recipes for my morning routine. This one is borderline Paleo but as long as your body can tolerate dairy, it is a great recipe. All is about balance in life, right?
You will need for 2 people: 2 eggs, some grated cheese (we went for some gruyere) and some herbs (I used chives this time but would love to try this recipe with tarragon)
So easy is that:
separate eggs, putting whites in a bowl and yolks in 2 separate bowls. Whip whites until stiff peaks form. Fold in cheese and chives. Spoon into two mounds on a baking sheet; make a well in center of each. Bake at 180 C for 3 minutes. Then add 1 yolk to each well; season with pepper. Bake for 3 more minutes and voila, enjoy!
